Vine To Tide 

To mark the release, we have partnered with Fujiya for a seated tasting experience that brings this wine, and others, into full context. This is not just a tasting. It is a study in how wine behaves at the table.

  • We begin with a Furikake Roll layered with tuna, salmon, hamachi, cucumber, pickled daikon, and salmon roe, paired with our 2025 Picpoul Blanc. The wine’s citrus driven acidity and faint saline edge sharpen the richness of the fish while lifting the briny pop of roe.

  • Spicy Tuna Toast follows, white bread, crème fraîche, avocado, and micro cilantro, paired with 2024 Clairette Blanche. Here, the focus shifts to texture, with the wine’s rounded mid palate mirroring the creaminess of the dish while maintaining balance through freshness.

  • The BBQ Albacore, lightly grilled with dried pepper and pickled cherry tomato, is where the 2024 Chardonnay steps in. The subtle toast from the puncheons echoes the grill, while its acidity weaves through the richness of the fish and the brightness of the pickled elements.

  • We finish with a Stuffed Jalapeño, cream cheese, spicy tuna, crab salad, deep fried, paired with our Sunshine Tap, an Orange Muscat based blend. A contrast pairing where citrus and a touch of sweetness cool the spice and cut through the richness, resetting the palate.

Throughout the experience, you will be guided by owner and winemaker Christopher Mora, walking through the decisions behind each wine and why these pairings work the way they do. This is a seated tasting with limited availability. Food pairings are curated specifically for this experience and no substitutions will be available.
